Toma Te la perdiz: compilation.
Crab wonton: compilation. Crab mousse wrapped in Wonton pasta, accompanied by a cream of the same shellfish.
Codwich: a mouthful of cod in pil-pil sauce with smoked salmon cream, accompanied by lettuce salad, caramelized tomato and plankton vichyssoise.
Huevo carbonizado: eggs with ham and potatoes. A poached egg, over jabugo ham cream with crunchy ham, and covered with a fine white truffle potato cream. On top, fake smoked coal with beech chips.
Free range Lumagorri chicken roll with mushrooms: chicken breast roasted at low temperature and stuffed with mushrooms on its own cream.
